Above is my new creation. I named it Kokochips Lemon Tea cookies because it contains kokochips, lemon and tea. Anyway, I made them a week ago. I bought the kokochips at Albert Heijn. It's very nice and crispy. Use any coconut macaroon recipe, just add some lemon juice and zest and remember to add some grounded tea leaves. Tadaa .... there you go .... your very own kokochips lemon tea cookie.
Whisk the egg whites, sugar, salt and vanilla in a large bowl until combined; fold in the coconut. Scoop heaping tablespoonfuls of the coconut
mixture about 1 inch apart onto the baking sheet. Use your fingers to
form into pyramids. Bake until golden brown around the edges, 20 to 25
minutes.
