Spiced Christmas cookies

• 1 cup plain flour
•  1/2 cup brown sugar
•  1 teaspoon cinnamon
•  1/2 teaspoon mixed spice
•  75g unsalted butter, chopped
•  1/4 cup golden syrup
•  White chocolate writing fudge, for decorating

Making beautiful things for others always make me happy inside and that is exactly what I do everyday without fail. I knit and crochet chemo caps for beautiful children in Care For Kosovo Kids. This morning, I was surprised by an email from the lady who has received the chemo caps. I sit with the laptop on my lap looking down at the pictures of the beautiful children. Their smiles means everything to me. Have a look at this picture.

Our kids know their own minds! Even though her mother picked another hat for her, this little girl was determined to choose the hat she wanted, with the colours she liked. They also happen to be the colours of the Dutch national flag..

I first learned how to crochet a simple bunny on 17th March 2015. Yes, I started by learning Amigurumi. Then, I tried making my own shawl by having you tube videos as my teachers. Soon after, I signed up for a knitting class. I later started spending time knitting and crocheting chemo caps for the children in Kosovo. And last year, I posted about 100 knitted and crocheted caps to the hospital. Here, I'd like to you to join me in bringing cheers and hope to the beautiful children. Peanut butter cookies with walnuts

I made some peanut buuter cookies with walnuts and I also used the same recipe but substitute the peanut butter with Nutella and it tastes WOW! Like really WOWWWWwwwww!

You should try baking them.

• 200g peanut butter (crunchy or smooth is fine)
• 175g golden caster sugar
• ¼ tsp fine table salt
• 1 large egg

• Method

  1. Heat oven to 180C/160C fan/gas 4 and line 2 large baking trays with baking parchment. Measure the peanut butter and sugar into a bowl. Add ¼ tsp fine table salt and mix well with a wooden spoon. Add the egg and mix again until the mixture forms a dough.
  2. Break off cherry tomato sized chunks of dough and place, well spaced apart, on the trays. Press the cookies down with the back of a fork to squash them a little. The cookies can now be frozen for 2 months, cook from frozen adding an extra min or 2 to the cooking time. Bake for 12 mins, until golden around the edges and paler in the centre. Cool on the trays for 10 mins, then transfer to a wire rack and cool completely. Store in a cookie jar for up to 3 days.

Choc Chip Cookies

I have always wanted to try out this Chocolate Chips Recipe. Have you tried it before?

• 1 cup butter, softened
• 1 cup white sugar
• 1 cup packed brown sugar
• 2 eggs
• 2 teaspoons vanilla extract
• 3 cups all-purpose flour 
•  1 teaspoon baking soda
• 2 teaspoons hot water
• 1/2 teaspoon salt
• 2 cups semisweet chocolate chips
• 1 cup chopped walnuts 
• 1. Preheat oven to 350 degrees F (175 degrees C).
  2. Cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Dissolve baking soda in hot water. Add to batter along with salt. Stir in flour, chocolate chips, and nuts. Drop by large spoonfuls onto ungreased pans.
  3. Bake for about 10 minutes in the preheated oven, or until edges are nicely browned.
   

Banana Fritters

Whenever I have ripe bananas at home, I will surely make this for tea. It is so simple to do. You can also make it aand enjoy it at home.


6 ripe bananas, mashed
4 tsp brown sugar
a pinch of salt
2 cups self raising flour.

Mix the above together in a bowl. Then leave the batter to rest for 30 minutes.
Heat some oil in a pan. Fry the spoonfuls of batter. Please make sure the heat is always on medium.

Myth had it that coffee were meant to keep us fresh and always prepared to be happy and bouncy. Well, I had been praying for wealth, health and happiness on my birthday. So why not believe in that myth? It is at least as promising as drinking tea when one is feeling down. Tea cures. Tea is the magic.

So, whenever I don't have enough money I could use to travel and entertain myself, I will have a nice cup of coffee whilst sitting by the window watching the sun dropping in the sky casting a warm orange glow.

Kokochips Lemon Tea Cookies

Above is my new creation. I named it Kokochips Lemon Tea cookies because it contains kokochips, lemon and tea. Anyway, I made them a week ago. I bought the kokochips at Albert Heijn. It's very nice and crispy. Use any coconut macaroon recipe, just add some lemon juice and zest and remember to add some grounded tea leaves. Tadaa .... there you go .... your very own kokochips lemon tea cookie.

Whisk the egg whites, sugar, salt and vanilla in a large bowl until combined; fold in the coconut. Scoop heaping tablespoonfuls of the coconut mixture about 1 inch apart onto the baking sheet. Use your fingers to form into pyramids. Bake until golden brown around the edges, 20 to 25 minutes.

Fried Asparagus With Lemon Butter Sauce

Okay... So it's still the 1st week of 2016. That means, most of us are still feeling GREAT inside of us. Well, we should be feeling great every day. Anyway, this weekend I am going to try this new recipe. 

Asparagus With Lemon Butter Sauce. Nice, huh?

I'm just going to share with you the ingredients required to cook it. And your challenge is to use the ingredients and cook the dish up. Can you do that?

Okay, here are what you need:

Asparagus Spears, trimmed

Olive Oil

Salt & Pepper

For the Butter Sauce:

Lemon Juice

Water

Butter

Pepper

It's up to you whether you want to fry the asparagus or bake it in the oven. Use your imaginations. Remember to make the lemon butter sauce. And also remember to season to taste. I hope your dish will turn out great.
